A Favorite Salad

Adam and I both love to support local restaurants and businesses, and one of our favorite restaurants makes this Apple-Brie salad. We decided to recreate it at home, and it’s delicious!

Ingredients:

  • Arugula
  • Granny Smith apples, chopped
  • Red grapes, halved
  • Sugared pecans (we like the Trader Joe’s bag, which is dairy-free)
  • Dried cherries
  • Brie–optional (or any other cheese that floats your boat)
  • Champagne Vinaigrette dressing or dressing of choice (Adam prefers no dressing, and I prefer lemon juice, olive oil, and a little salt and pepper)

Adam likes to add flax seeds and croutons to this salad, too. I hope this inspires you to create a tasty, beautiful, and nutritious salad at home. Let me know what you come up with!
